In the coming month a special treat lies ahead for foodies or if your looking for a different dining experience with family or friends. On August 15th, Aidan Ryan will be joined by award-winning chef Chad Byrne for an evening of seasonal open-fire cooking, bringing the flavours of Kerry to Meath.
The venue is Bettystown House, a restored 17th-century estate in County Meath, which is hosting a series of long-table dining events throughout the summer. Following the success of the inaugural dinner with Reuven Diaz, Chad Byrne will join Aidan Ryan to create a one-night-only menu celebrating bold, seasonal ingredients and open-fire cooking, bringing together the best of Kerry and the Boyne Valley for an unforgettable dining experience.

As Executive Head Chef at The Brehon in Killarney and creator of The Hungry Donkey, a converted horsebox food truck, Chad is known for his produce-led cooking, showcasing exceptional ingredients through simple, thoughtful dishes. He will make the journey north from Kerry to bring his distinctive style to Bettystown House.
Set beneath a beautifully styled canopy in the grounds of Bettystown House, guests will enjoy a five-course sharing-style meal at an elegant communal table. Limited to just 80 guests per event, the evening is designed to create an intimate and social dining experience. Tickets are priced at €100 per person and include a welcome cocktail and two glasses of wine.
Dating back to 1630, Bettystown House has been carefully restored by the Ryan family and is typically available for private hire only. The Summer Series offers a rare opportunity to experience the estate through exceptional food, long summer evenings and communal dining in one of County Meath’s most beautiful historic settings.
For those who wish to extend the experience, an overnight stay at Bettystown House can be booked exclusively by guests attending the Summer Series. Room rates range from €150–€180 per night, subject to availability.
